
I’ve been enjoying these versatile parfaits all summer for breakfasts, snacks, and desserts. The recipe is as simple as cutting up some fruit and layering with yogurt and granola. Mix it up with different fruits if you like-it’s also delicious with plums, blackberries, strawberries, or blueberries. I like to use soy yogurt, but any type of yogurt will work just as well. When buying soy or almond yogurt, remember to keep an eye on the saturated fat content–some brands are definitely healthier than others. For more of a dessert parfait, I like to substitute animal crackers or cookie crumbles for the granola.
Soy Yogurt Peach Parfait
Ingredients (Serves 1):
1/2 cup plain-flavored soy yogurt
1 peach
A few raspberries
2 T granola of choice
1.5 tsp brown sugar (or substitute maple syrup or honey)
Cut your fruit into bite-size pieces and put about 1/3 of the fruit into the bottom of a glass or bowl. Spoon some of the yogurt on top and sprinkle with granola. Repeat these layers a couple more times. Top with brown sugar or other sweetener. Enjoy!
