
Peaches are one of my favorite fruits. There’s really nothing better than a flavorful and sweet summer peach. Also delicious this time of year: basil, and anything grilled! We like to make flatbreads on the grill for a quick and delicious meal. You can use pizza dough for the base, but we often make things even easier by using store-bought naan as the base instead. The key is to grill the flatbreads just long enough to heat the toppings and toast the naan. Feel free to switch up the sauce and toppings with whatever suits your fancy. Blueberries with caramelized shallots and goat cheese are another delicious combo.
Grilled Peach and Basil Flatbread
Ingredients (Serves 2):
2 naan
1/4 c pesto sauce
1 peach, peeled and sliced
2 handfuls of arugula and spinach, or other greens of choice
12 fresh basil leaves
8 oz goat cheese
While you heat up the grill to medium heat, assemble the two flatbreads on a cookie sheet. Spread a couple of tablespoons of pesto on each naan. Layer on the goat cheese, greens, and peach slices. Place the flatbreads on the grill and cook for a few minutes until the naan is toasted and slightly charred on the bottom. Remove from the grill and top with fresh basil leaves. Serve with seasonal fruit or a side salad.
